Carrot Cake

Cakes in Japan tend to be on the light side, I prefer heavier cakes. After a few experiments I hope to have got something in between.

  • 75 g carrots
  • 110 g plain flour
  • 75 g brown sugar
  • 75 g butter
  • 1 tsp baking powder
  • 1/4 tsp nutmeg
  • one large beaten egg
  • 50 g chopped walnuts
  • big pinch lemon zest

Cream the butter and sugar. Add sifted flour, baking powder and nutmeg.
Add the egg and mix well. Add the grated carrot, lemon zest and walnuts. Mix again.
Spoon into a pre-greased loaf tin.

One hour in a pre-heated oven at 170ºC.
