Rye bread

How to make simple rye bread:

  • a third rye flour
  • two thirds plain flour

It’s not very creative and will have to do for the meantime. Substitute a third of the flour from the plain bread recipe with rye flour. Resist the temptation to add extra flour early on when kneading. Stick with it and it should soon be easier to work with.

    I used to live in Shimane, in the town formerly known as Yokota (I think it is Oku-Izumo now). Anyway, I was wondering, where do you get your rye flour? Do you grow it? I used to be able to get whole wheat flour locally for semi-reasonable prices, but now it is hard to get anything but white. We live in Gifu now and have a Maya, too.

    I found a few bags of rye flour in one of the larger supermarkets in town – Hok chain? Only when I got home, I discovered them to be a year past their display date. :(
    They do have a few types of flour, but in little 200g bags at a ridiculous price. Bread machines seem to be getting more popular, so perhaps there might be more chance of getting hold of some decent flour at a better price. Perhaps that’s a reason to grow rye flour…
