Tomato Sauce

- six or more big tomatoes
- a few small onions
- half a carrot
- one clove of garlic
- 1 tbsp olive oil
- two vegetable stock cubes
- good pinch of salt
- pepper
- rosemary
- basil
Sweat the diced onions and garlic in the oil. Add the diced carrot after a few minutes. Crumble in the stock cubes, rosemary, salt, and pepper. Add the chopped tomatoes cook for 15 minutes. Blend/liquidise and return to the heat. Simmer until reduced sufficiently. Mix in the basil.
If the tomatoes are a little green, I add a little brown sugar. Old peppers tend to get added. Their skins are rubbed off after getting charred over the stove having cooled in a sealed plastic bag.
